I DON’T BELIEVE IT’S (Gluten Free) Chocolate Cake

This is seriously one of my favourite chocolate cake recipes and one of my favourite dessert cake recipes. It is no oil painting. I have made a lot of much better looking chocolate cakes, but none that taste as good and moist as this one. It has an almost brownie, fudgey yumminess. It has NO FLOUR. None. Not even Gluten Free Flour. It’s made with Quinoa. Quinoa is, of course, a super food. And it is super easy to cook. Use the same proportions as rice (one cup of quinoa to 2 cups of water. Bring it to the boil, cover and simmer for 15 minutes. The Quinoa should be…

Low Carb Lime & Coconut Icecream

I put the lime in the coconut and VOILA! Best Ice cream Ever according to Jim and I am pretty sure Tracy was equally enamored. First of all, I am not a HUGE ice cream fan – put me in the once a month category and that would be maximum consumption and I always go for the artisan gelato bar places. Unless I’ve got company I never keep ice cream in my freezer at home. BUT last week I found a perfectly pristine ice cream maker at Value Village for $7.99 on a Tuesday (so I get 30% off). It is a Donvier. I looked the brand up on my…

    Blueberry Lemon Glazed Scones

Sometimes I think I’ve actually become my mother because I make scones now once or twice every week. My Grandmother was a dab hand at baking scones and hers were deliciously flaky and loaded with plump sultanas. She served them warm with lashings of butter. I am pretty sure she baked them practically every day. Only one of her daughters had the slightest interest in cooking or baking and luckily for me, that was my Mum. She would knock up a batch of scones at the drop of a hat…usually they were fruit (of the dried variety) though sometimes she’d make cheese ones at lunchtime. Yummy. I used to always…

    Raspberry White Chocolate Scones

Best scones on the planet, hands down! Ask anyone. Ask my friend Des…these are my go-to for when I want to treat someone. They aren’t too sweet and the white chocolate gives them a nice texture. Not to mention raspberries are one of my favourite fruit. Being a big fan of raspberry white chocolate scones I’ve tried lots of them – but I have to say these are the best. They’re light and fluffy and just melt in the mouth yumminess! Ingredients 2 cups flour 1/4 cup sugar 1 cup raspberries 1/2 cup white chocolate chips 1 cup whipping cream 6 tbspns cold unsalted butter pinch of salt 1 tablespoon…

    Best Ever Warm Blueberry Sauce

Blueberries are my favourite fruit. I buy huge trays of them every summer. I made blueberry sauce with half of them and snap freeze the rest to get me through the long, wet winter. The hot sauce goes great with pancakes, but is best with my Brioche French Toast which is a whole ‘nother story. I don’t like French Toast usually but my adapted Martha Stewart recipe French Toast is just divine and with the hot blueberry sauce over top is to die for. I made it a couple of times from a highly rated allrecipes.com recipe. I felt it tasted a little strange in a strangely medicinal sort of…

    Best Pancakes Ever

This is the recipe I get asked for most often. People think it’s a big family secret that I hold dear and will never share. Here you go! It’s easy and delicious! Most of my favourite recipes are a result of trial and error. I cook breakfast pretty much every day and sometimes people are here for several days, so I need to have a good variety of breakfast options. People ask for pancakes ALL the time. And when I serve them, they’re ALL gone. It is the recipe I get asked for most often. I tried a lot of different recipes but this is the one that’s stuck. The…

    Here Comes the [bloody] Bride

I love my cake business. Best thing I ever did – it really satisfies my creativity and it’s so much fun and so rewarding seeing people genuinely enjoy the results of my labours.  I’ve met some great people and made some good friends through my baking too. I genuinely thought that getting wedding cake commissions would mean I had arrived…made it…reached the pinnacle of custom cakery…. WRONG WRONG WRONG The truth is that I would not lose a single wink of sleep if I never did another wedding cake ever again. If there are any of my brides reading this: Stacy – no honey, you were never a bridezilla Sylvia…

Pork with Mango and Black Beans

Six years ago Jim and I were getting ready to move from our duplex into the house we were building. I hate moving food – drives me crazy. Especially all the old cans from the back of the back. So I invented the “pantry challenge”: I was not going to buy anything other than dairy and fresh vegetables until we had used up everything in the pantry. It started off being rather sinful: Kraft dinner and Stag Chilli. Once we got through all the “camping/bachelor food” it became more difficult. I find it impossible to fathom what was actually going through my mind I bought the 4 cans of beetroot…
