
I DON’T BELIEVE IT’S (Gluten Free) Chocolate Cake
This is seriously one of my favourite chocolate cake recipes and one of my favourite dessert cake recipes. It is no oil painting. I have made a lot of much better looking chocolate cakes, but none that taste as good and moist as this one. It has an almost brownie, fudgey yumminess.
It has NO FLOUR. None. Not even Gluten Free Flour. It’s made with Quinoa.
Quinoa is, of course, a super food. And it is super easy to cook. Use the same proportions as rice (one cup of quinoa to 2 cups of water. Bring it to the boil, cover and simmer for 15 minutes. The Quinoa should be opaque. Take it off the heat and let it absorb the water for 5 minutes then fluff it with a fork.
INGREDIENTS
2 cups cooked quinoa
1/3 cup almond milk or whatever milk you prefer
4 eggs
1 tspn vanilla
1/2 cup margarine or butter (melted)
1/4 cup melted coconut oil
1/2 tspn baking soda
1 1/2 tspn baking powder
1/2 tspn salt
1 cup cocoa
1 cup granulated sugar or cane sugar
Heat oven to 350°
Line 2 round 8″ cake pans with parchment paper
In a food processor, whiz the eggs, milk and vanilla to combine
Add quinoa, coconut oil and butter or margarine (all cooled)
Blend til completely smooth (I usually do it for about a minute to really grind down the quinoa)
Sift together dry ingredients into a large bowl and whisk to combine
Add the wet mix into the bowl and stir to combine well.
Split the batter between the 2 pans and pop in the oven for about 30 minutes or until a toothpick comes out dry.
Remove from the oven and allow to cool.
This cake is very soft so be careful loosening it and lifting it from the pan
FILLING
You can fill this cake with whatever filling you want:
– chocolate buttercream
– fresh cream and fruit
– chocolate ganache
OR as I did, a creamy, light whipped cream cheese frosting and macerated strawberries.
I added some balsamic glaze to the strawberries and sugar and they were sooooo good!
To top off this beauty, I used CHOCOLATE FUDGE FROSTING.
This frosting is the bomb, and I challenge anyone to NOT lick the bowl, the spoon and anything else that came into contact with the fudge!
CHOCOLATE FUDGE FROSTING
2 cups granulated sugar
1 cup unsweetened cocoa powder
1 cup whole milk
½ cup (1 stick) salted butter, cut into cubes
1½ teaspoons vanilla
Put all ingredients in a pot and melt over low heat
Bring slowly to the boil, stirring the whole time
Boil for 1 minute
Remove from heat and stir til cool (about 10 minutes)
