    This pie was almost like a “Pantry Challenge”: I bought a huge bag of pears on special at Superstore and wanted to make something that would be good for breakfast. I also had ricotta in the fridge – I bought it at Costco for gnocchi and of course only needed ONE of the 2 tubs, so finding a use for the second one was becoming critical.     Egg Free Banana & Coconut Pancakes

    One of the questions I ask guests before they arrive is “do you have any allergies or food preferences?” It is so much better to be prepared and nothing worse than being told right before breakfast that someone is lactose intolerant or allergic to eggs.     A few years ago I saw some of these cool glass towers or “totems” on Etsy and Pinterest – and then I was having my nails done at Carolyn Manchulenko‘s house and she had made a couple of beautiful, elegant and quite whimsical ones…which of course got me inspired.     Sometimes I think I’ve actually become my mother because I make scones now once or twice every week.     I am very partial to mirrors – and it would seem I am in a minority because when I go to auction I can pick them up for peanuts. I’ve bought some very ornate ones and some very simple ones and I like to change them around to suit the season and my decor.     January is (blissfully) quiet here at the Bed and Breakfast. I’ve only had a handful of guests, and they’ve been mainly upstairs so I’ve had full run of my downstairs workshop, plus the time to work on finishing a lot of projects. I finally got the dollhouse finished. It had been upstairs in the lounge since around October but I hadn’t glued anything in place and some lighting needed work. Done and DONE!     Zero. Can’t see a thing. The snow is blizzarding right now and it’s unexpected, unpredicted and if it hadn’t done the same thing last winter it would be unprecedented. I got up early this morning (disturbed by an ignorant 5.45am text message from one of Jim’s customers). Did a few chores. Answered some emails. Put the garbage out.
